Top 10 dishes to try Chile

Food and eating are a huge part of a successful and enjoyable holiday.

Chile has great seafood and meats, as well as some great wines – our own Alan Lyall lived in Santiago for almost two decades, and shares his favourite Chilean dishes.

1) MACHAS A LA PARMESANA

Grilled Razor clams with melted parmesan cheese. Even more enjoyable with a great sea view.

 

2) EMPANADAS DE PINO

Tasty pasties with a filling of cumin laced mince and onion, raisins, black olive and hardboiled egg.

Great whilst on the go.

 

3) PASTEL DE CHOCLO

Corn pie with minced beef and onion, chicken, raisin, black olive, hard-boiled egg filling with a crushed corn and basil topping. Usually served in an earthenware bowl and oven baked with a sprinkling of icing sugar. Best eaten out of doors under a grape laden trellis.

 

4) CAZUELA

Broth with either a chunk of beef or chicken, a potato, a slice of pumpkin, a piece of corn and sometimes some rice too. Ideal for a wintry day.

 

5) CONGRIO

Succulent fresh conger that can come in various guises such as  fried or grilled with your choice of accompaniment. A firm Chilean favourite.

 

6) ENSLADA CHILENA

Tomato, onion, cilantro and chilli salad. The side dish of side dishes.

 

7) HUMITAS

Ground corn mixed with onion and basil, wrapped in corn leaves and boiled in salted water. A taste of the Andes.

 

8) CEVICHE

Raw  seafood cured in lemon juice. Popular all along the Pacific seaboard.

 

9 ) CHANCHO EN PIEDRA

Great accompaniment for meat – salsa made of ground tomato, garlic, green chilli, oil and parsley. Barbecue heaven.

 

10) CURANTO CHILOTE

Typical of Chiloe Island – Traditionally cooked in a hole in the ground on hot stones and covered with giant rhubarb leaves. A mixture of shell fish, fish, chicken, potatoes and vegetables. Best tasted on the Island.
